Coarse Cerish is a specialized, mid-fine variety of bulgur designed for culinary applications that require a balance between high binding capacity and a noticeable grain texture. While standard Seferkitel is almost flour-like, the “Coarse” version retains a slightly larger grain size. This allows the dough of traditional stuffed meatballs (Kibbeh) to remain porous yet incredibly strong, preventing the outer shell from becoming too “doughy” and ensuring it maintains a perfect, rustic bite after frying or boiling.
